Terry has been busy creating delightful gifts for those on her list this holiday season.  Looks like she had a little helper decorating for the holidays!

Enjoy a healthy snack and a wonderful breakfast muffin to share with your holiday guests!

Granola   ( The recipe below is for a single batch, so double what is below to make a nice size batch)
 
2 cups rolled oats (I did not use one-minute oatmeal)
1 tsp cinnamon
1/4 tsp salt
3 T. plus 1 tsp vegetable oil
1/4 c. honey
1/4 c. brown surgar
1 tsp. vanilla
1/3 c. slivered or sliced almonds
1/3 c. hazelnuts (filiberts)
1/3 c. golden raisins or regular raisins
1/3 c. dried cherries or craisins
 
Line baking sheet with parchment paper; preheat oven 325 degrees
Toss oats with cinnamon and salt in medium bowl.
Stir oil, honey, brown sugar, and vanilla; whisk until combined
Pour honey mixture over oat mixture and stir well till evenly coated.  Poor mixture onto baking sheet and spread evenly,
leaving some clumps
Bake 10 minutes then using spatula, lift and flip granola;
Sprinkle almonds over granola and bake 5 more minutes
Remove again and lift/flip then sprinkle with hazelnuts and bake 10 more minutes.  
Cool completely.  Sprinkle raisins and cherries over granola and then transfer to airtight container.
 

MacIntosh Muffins
 
1 1/4 C. vegetable oil (I use canola oil)
2 C. sugar
3 C. flour
3 eggs
2 tsp. vanilla
1 tsp baking soda
1 tsp. cinnamon
1 tsp salt
2 C. MacIntosh apples, chopped and peeled (you may substitute with other types of baking apples)
1 C. chopped pecans
1 cup coconut
 
Mix sugar, eggs, vanilla.  Then add vegetable oil.  Combine flour, baking soda, cinnamon, and salt.  Add to sugar mixture and mix well.
Mix in apples, nuts, and coconut.  Mix well.  Fill greased muffin cups 3/4 full.  Bake at 350 for about 20 minutes or until golden brown.
These muffins will not have much of a "crown" on top because they are very dense in texture.
